  • Rinse the rice in cold water and set aside to drain.
  • Blend the tomatoes, bell peppers, Scotch bonnet peppers (if using), onion, and garlic in a blender until smooth.
  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  • Add the blended tomato mixture to the pot and stir well. Cook for about 10-15 minutes, stirring occasionally, until the mixture has reduced and thickened.
  • Add the tomato paste, curry powder, thyme, smoked paprika, bay leaves, dried basil, seasoning cubes, and salt to taste. Stir well to combine.
  • Add enough water to the pot to cover the tomato mixture, about 4-5 cups. Bring the mixture to a boil.
  • Add the rice to the pot and stir well to combine. Reduce the heat to medium-low and cover the pot with a tight-fitting lid.
  • Allow the rice to cook for about 25-30 minutes, or until the rice is tender and the liquid has been absorbed. If the rice is still undercooked, add a little more water and continue cooking until tender.
